8 oz cremini mushrooms, sliced

3 cups vegetable broth

12 oz spaghetti

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

2 tbsp chopped parsley
Instructions

Heat olive oil in a large pot over medium heat. Add garlic and mushrooms; cook until soft and fragrant, about 5 minutes.

Add spaghetti and vegetable broth, making sure pasta is mostly submerged.

Bring to a boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally until pasta is tender and liquid is mostly absorbed.
