A comforting and creamy pasta that’s simple to make, using one pot from start to finish. Perfect for lazy nights when you want something hearty without the cleanup.

Ingredients

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 8 oz cremini mushrooms, sliced

  • 3 cups vegetable broth

  • 12 oz spaghetti

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • Salt and pepper to taste

  • 2 tbsp chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and mushrooms; cook until soft and fragrant, about 5 minutes.

  2. Add spaghetti and vegetable broth, making sure pasta is mostly submerged.

  3. Bring to a boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally until pasta is tender and liquid is mostly absorbed.

  4. Stir in heavy cream and Parmesan cheese until the sauce thickens.

  5. Season with salt and pepper, top with parsley, and serve hot.
